Chocolate Lavender Oatmeal Bars
Enjoy a delicious twist on a classic treat with our Chocolate Lavender Oatmeal Bars. These bars combine the comforting flavors of oatmeal and rich chocolate with a subtle hint of culinary lavender, making them perfect for a cozy snack or a sweet dessert.

Cook Time: 30 minutes

Ingredients:
- 1 C. unsalted butter
- 1 C. Brown Sugar
- ⅓ C. White Sugar
- 1 ½ C. Old Fashioned Oats
- 1 egg
- 1 ½ C. All Purpose Flour
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- 1 C. Semi Sweet Chocolate Chips
- 3 Tbsp Coconut Oil
- 1 tsp Vanilla
- 1 tsp Culinary Lavender
- ½ tsp salt
- ½ tsp Maldon Salt (flaky salt)
Instructions

Preheat your oven to 350℉.

In a medium bowl or stand mixer, whip the butter, brown sugar, and white sugar until fluffy. Then, add the egg and vanilla extract, mixing well for about 3-4 minutes.

Gradually add the dry ingredients—flour, oats, baking powder, baking soda, salt, and culinary lavender—to the wet mixture. Stir until combined.

Line a 9x13-inch metal pan with parchment paper, then spread the batter evenly across the pan.

Bake in the preheated oven for 20-22 minutes, or until the edges turn lightly golden brown.

Remove from the oven and allow the bars to cool completely.

While the bars cool, melt the chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second increments, stirring in between until smooth.

Pour the melted chocolate evenly over the cooled oatmeal bars and spread with a spatula.

Sprinkle the top with additional culinary lavender and flaky Maldon salt for a perfect finish.

Refrigerate for 30 minutes to set the chocolate, then cut into squares. Serve and enjoy your delicious Chocolate Lavender Oatmeal Bars!
Recipe Adaptations

Vegan: Replace butter with vegan butter, egg with 3 tbsp ground flaxseeds mixed with 2 tbsp water, brown sugar with date syrup, and white sugar with coconut sugar.
